Why is soybean unique?

* An acre of land planted in soybeans can produce 10 times as much protein as animals grazing an acre of land.

* A pound of beef costs about 4 times as much to produce as a pound of soybean protein.

* An excellent source of Thiamine (Vitamin B1).

* Soybean flour added to wheat bread to the amount of 5% of total flour, makes the protein complete, and also makes the bread more moist and tender.

* Soybean flour may be substituted in some entree recipes for the binding qualities of eggs.

* Fortified soy "milk" can be safely substituted for cow's milk, especially for infants having a milk allergy.
